I just switched from using the Microsoft browser capabilities component and browscap.ini to BrowserHawk. But I am getting 'Default' returned for many browsers with 'Unknown' set for many of the property types. Why?

Although BrowserHawk was installed your code is still referencing the MS browser component which does not recognize many browsers.
You must change all instances of "MSWC.BrowserType" that appear in your ASP pages to "cyScape.browserObj". Doing so will use the BrowserHawk engine to indentify the browsers and their capabilities.
